The idea for these links came to Chris while attending college in Memphis, a city where barbecue reigns supreme. To recreate the sweet and spicy kick of traditional Memphis barbecue in sausage form, we use barbecue spices, scallion and garlic, vinegar, and brown sugar. Our pigs enjoy a healthy lifestyle outside in the pasture and woods, resulting in meat with an exceptional flavor and sausage that can’t be beat. These 1/3 lb links have a natural casing so we advise starting them over low heat before searing, to reduce the risk of bursting.
